When you’ve selected the app you want to use, so you’ve chosen Gmail, click the button that says Default Mail app.

The options I have (Gmail, Outlook, Mail) may differ from those you have, as you may have more apps downloaded that you will be able to access. That’s how, I chose Gmail. You can always change the default app in the future.
